How about "The Inventory 500". A cart racer with The Desoto (Sam and Max), Delorean (BTTF), something Wallace bolted together, and some kind of Monkey Island pirate ship cart?

Just throwing it out there, I think it would be fun.

The bumper car Guybrush was floating in at the beginning of Curse. Or maybe something related to the yet-unseen Madly Rotating Buccaneer? Mad Monkey Roller Coaster car? Why do all my ideas come from the Carnival of the Damned?
