The episodes ship monthly but since they are constantly working on the episodes that haven't been released there is no set release date yet. They managed to get the games out towards the end of the month in the past though. So mid to end May for Episode 2. But don't quote me on that.
As today has shown sometimes you cannot prepare for everything.

The $25 price is for the whole game. The whole season. All 5 episodes. No more paying needed.

Only if you bought 1 episode at a time, like I think they can do on the PSN, will you have to buy each episode separately. In that case, you will have to pay more, but you only paid $5 per episode so it works out to the same amount anyway.
