I did my best to tell when everything can be found here:

I know it's long and takes a lot of clicking, but it should help you out.
Alot of help went into that, and aside from the nunchucking (which is smart to just do in order during standard play), all of the objects that MUST be collected in standard play are outlined by the headings.

Telltale did their version here:

But there's no distinguishing about when you must do everything.
