The Voodoo Lady would never have told LeChuck how to feed La Esponja, so he needed Guybrush to do it. I think it was all part of his grand plan to get his voodoo back.
Plus, by turning himself in, he was able to get the The Voodoo Lady imprisoned too - one less obstacle in his path.
