I was extremely disappointed in the fact that Monkey Island wasnt involved in the game at all. I think Monkey Island should definitely be a part of every installment to the series!

Why do you think Monkey Island is empty nowadays? All kinds of stuff could have appeared in there. For example, did SMI have lava rollercoasters or Church of LeChuck? Answer is no, they did not.
And since people say a lot of time has passed since EFMI and as the beginning of the Screaming Narwhal shows there have been some great adventures in between, it would be very, very unlikely that Monkey Island would be "empty".
Who knows what LeChuck could have done or created in Monkey Island (maybe its full of Killer Walruses). And it would be easy to come up with a reason for Guybrush to go to Monkey Island, even if it turned out to be empty (which I seriously doubt).
