I don't know how you can get it to change to a French language track - I'm assuming there may be an option on the disc itself.

As for working on a Mac, I'm pretty sure ScummVM is a good start. (It worked for me, at least...) It helps play older games on an otherwise way-too-modern system, Mac included.
