It's because George Lucas is an arrogant and corrupt idiot.
He used to talk about how the colorization of film was wrong because you can't alter history but now that he's in a position of power, he decided "sod that, I can alter history because I'm a God amongst men".

I'm not sure if the sale of Lucasfilm to Disney will allow them to re-release the original versions in HD but I suspect probably not.
