The really evil one played during the credits after he stabs 'Brush! That gave the chills and I played it twice just to hear it again, maybe my favorite version of evil LeChuck ever...

I like this tune but my favorite LeChuck tune from Chapter 5 is the one called LeChuck Battle. That's a great piece.

Every variation of LeChuck's theme in Tales of Monkey Island is great.

Of course, I still feel partial to the steel drums rendition in Chapter 1's prologue!

I can be wrong, but as far as I know the "videos" are specially crafted scenes rendered by the engine.
You could try to record them with FRAPS though

I use CamStudio. You can't get sound, though. Bummer.
