I'm definitely not graphic hungry. I love 2d games and simple 3d games. Note that people don't complain like this about, say, CMI. The problem is that the graphics in EMI, particularly the character models, were just BAD.
For pretty much all of the late 90s there was a blind belief among game companies that ALL GAMES MUST BE 3D, or they will not sell, the companies will atrophy and die and be laughed at. Unfortunately, this was despite the fact that 3d graphics and accelerators were pretty immature, GOOD 3d artists were hard to find (and the game 3d production process was pretty new) and games looked much, much worse than they would have if they'd just stuck with more traditional methods for the time.
There were a number of games from this era that went 3d and were successful (and were actually a big reason why all the game companies started insisting on 3d for everything). Mario 64, for example, has pretty primitive 3d graphics by today's standards. But they're really well-done and appropriate, and I don't see any reason why that game should be remade.
Of course, I think I'm a little jaded because my graphics card when EMI came out was underpowered (I think I still had still had a Voodoo 2) and so the graphics were especially bad for me. Looking on it now they're probably not QUITE as bad as I remember. But still pretty bad. And combined with the horribleness of the rest of the game, it adds up to FAIL for a lot of us (not everyone!).
