I chose all of the dialog options and I can't get thru. HELP!

You can make them beating the milkbox around. If you go to that point you stand on top of it. In some special constellation it gets intense…

why did biff mention that hes mad at marty for the manure?
are we to believe hes aware that marty is a time traveller? |

Nah, just that at some point in this timeline, Marty got him into manure somehow.
Considering how often it happens to Tannens, it's not that much of a stretch. |

Sure. It may not have happened in the timeline where Biff was his father's boss.
Or in the timeline where Biff was a wimp working for Marty's father. But in the timeline where Biff has been threatening and provoking Marty's father after they crippled him? It's very likely that Marty would make a stand. |
