Would Law and Order Legacies work on a I-Pod Touch?

Yes, as long as you're using iOS 4.2 or later.

Played through the first two episodes on my 4th gen Ipod Touch yesterday

it was pretty glitchy (lockups/sound looping), but it still worked well enough and I enjoyed myself.
