It's what was left out that bothers me the most other than the redesigns of the characters. For example when you encounter the monkey on monkey island, you can't examine him like you can in the original game. When you did he would say, "He looks hungry," or "He still looks hungry." It doesn't sound like much but these were contextual clues that were there to help. The new hint system is just lazy.
Then there's LeChuck. He doesn't even look like a ghost anymore, he looks like a zombie with ghost hands. He and all his crew are supposed to be transparent, it's even mentioned in the dialog. Then there's the tragic loss of Bob's awesome Skull Beard™. Not to mention the destruction of the awesome monkey animations that Steve did.
A lot of the backgrounds in general were messed up, for example the aging done on all the ships at Stan's. Stan's personal ship and the red one at the end of the dock are supposed to look prestine, they're the best on the lot. Heck all of them are supposed to look decent except for the one Guybrush actually buys. Now the joke about it being barely sea-worthy is hurt by the fact that all the ships are rotting. I can go on... =P
