No, he tells Stan that when he first sees him at his stand. You ask Stan why he isn't prepping for the case (not sure if it's a compulsory line) and he says the day he can't beat you with a widly flapping arm tied behind his back, etc, etc, and Guybrush says "Well, I don't plan on dying today", and Stan answers "And I didn't plan to wear the same jacket for 20 years, but here we are".
It really doesn't stand out that much until he DOES die later that day.
EDIT: actually, I think I might be mixing two different things, because if I remember correctly, after he says he can beat you, he says "know what I mean?" you say "not really" and he says "Exactly". Or something. So it might be a different dialogue option, but it's with Stan at his Trial of the Century-y-y-y merchandise emporium thingie.
