I prefer "The Crazies" style zombies.
Over the course of 72 hours it affects one's mind to make them at first withdrawn and eventually totally homicidal. Over the next week and a half it slowly disfigures a person into the more "traditional" zombie look.
They're not necessarily undead or invulnerable, you can kill one like a human and they'll stay dead, but IMO it has the most plausibility. You can't tell someone's infected until they lock you in your room and set the house on fire, but in the end you get the same result.
Plus, it was the only zombie fiction movie that started before the outbreak and actually showed how everything went to hell. Traditional zombie films can't do that, they're dangerous in hordes but weak solo, and nobody's come up with a believable way to give them the numbers to really threaten anything.
